Shakshuka
Ingredients
2 tbsp olive oil
3 medium sized eggs
2 tbsp chopped tomatoes
6 slices of chorizo
1 tbsp coriander
1 tsp paprika powder
1 tsp garlic powder
1 tsp ground Himalayan salt
A pinch of black pepper
Method
In a medium skillet over medium heat, add 2 tbsp of olive oil. When the oil is a bit hot add the 2 tablespoons of chopped tomatoes and all the spices.
Simmer for 5 minutes and stir occasionally. Then add the slices of chorizo. When the 5 minutes have passed, break the 3 eggs directly on the slices of chorizo, space them out.
Cover the pan and cook for 5 minutes over low heat.
